Hrishi Desai, Chef Patron at Farlam Hall’s Cedar Tree Restaurant says: “This achievement is a testament to the dedication, passion, and hard work of every single team member across all departments. This is a huge news for Cumbria, especially the Northern part which will boost the tourism economy as foodie holidays become more in demand.
“A Michelin Star is not just about the food it reflects the entire guest experience, from the warm welcome at the door to the seamless service, the immaculate housekeeping, and the behind-the-scenes efforts that keep everything running smoothly. This is true Cumbrian hospitality!”
Ollie Bridgwater, Executive Chef at SOURCE at Gilpin Hotel, says: “For the restaurant to be recognised for a third year by the Michelin guide makes me incredibly proud, and for Gilpin Hotel & Lake House to have been awarded a Michelin star for its dining experience for eight consecutive years is truly an accolade for the entire team. Our ethos of sourcing local food and bringing exemplary techniques to each dish, coupled with our fantastic location makes for an outstanding dining experience.
He continues, “My training was at three-Michelin star level and it’s ingrained in me. Our dishes at SOURCE at Gilpin Hotel are refined and creative; there are a lot of processes to create some of our dishes, and if we have to do each one four times a day to get it right, we do it four times a day.”
Managing Director of Cumbria Tourism, Gill Haigh, adds, “Cumbria’s exceptional landscape and abundance of locally sourced produce sets the scene for foodie excellence, but it is an exceptional achievement for these restaurants to run at continuously high standards to retain their Michelin stars, especially against the backdrop of rising costs and a challenging few years for the hospitality industry following the pandemic.
“Huge congratulations go to the talented and hard-working businesses which continue to play a vital role in helping the Lake District, Cumbria to maintain its well-earned reputation as being among the very best food and drink destinations you are ever likely to find anywhere in the world.”
